Grilled Spicy Skirt Steak
| a ¾ to1 lb. skirt steak |
2 tsp. Worcestershire sauce |
| 1 Tbsp. chili powder |
1 tsp. sugar |
| 1 tsp. ground cumin |
¾ tsp. black pepper |
| 1 large garlic clove, minced & |
¼ tsp. allspice |
| mashed to a paste w/1 tsp. salt |
1 Tbsp. vegetable oil |
Cut steak into large pieces to fit on grill and set aside.
In a small bowl, stir together all other ingredients. Rub over both sides of the skirt steak pieces. Marinate beef in a large resealable plastic bag, chilled, for 30 minutes.
Grill steak over medium heat for 3 to 5 minutes per side until just spongy to touch for medium-rare. Let steak stand on cutting board, covered, for 5 minutes. Cut across the grain, on the diagonal, into thin slices.
Serves 2 generously.
